Is it wrong that I'm totally in love with polenta? I used to just like it, but now that I'm making it fresh (from a box) instead of using the Trader Joe's tube, I've gone buck wild. I've been using it instead of brown rice when eating Mexican dishes. I make chips out of it and eat them as a snack. In fact, tonight is the night I go to job #2 and I hurried home after job #1 so I'd have enough time to make the polenta and then bake them into chips to have with my leftover chicken picadillo. Plus, I made extra so I could take it to the workshop with me tomorrow. I've gone made with polenta passion.
I'm actually at job #2, and I'm waiting for the library to clear out a little bit so I can heat up my dinner and eat it. I'm starving! I'm trying to be patient, sit here, smile and drink my water, but man, don't these people have dinner to go home and eat? That's my stomach talking, my brain is happy because there are so many children here checking out books....
Marta, if I'm so clever, how come I screwed up the custard? I basically made salmon with noodles and very fluffy scrambled eggs. I still maintain that it is very tasty....I bet it's even better when you make it right!

Oh sorry, just making a mental note about polenta. As for the custardy thing, you have to whisk like mad the whole time. My arm still hurts from making this dish, and that was days ago!
I probably won't make it again because I'm afraid of pasta, even if it is whole wheat. Polenta, on the other hand, has my interest peaked. It's all the rage on the WW boards. Are you on there?
I used to be on there a lot, but not so much anymore. My old thread died when my thread buddies kind got too busy with jobs that didn't have them in front of computers. I really should get back to them. Which boards do you hang on, Marta?
